It is the tank to incubate the mild cream cheese. The tank is designed with three jackets. Hot water or steam for heating and cold water for cooling to the intermediate jacket of the tank can be given if desired. On the outside of the tank, there is isolation. On the bottom of the tank, an injector is placed to directly give steam to the product. There are two mixers in the tank. One of them is designed with a scrapper to block the product to stick on the jackets during the heating/ cooling process. The second mixer has a high speed to provide a good mixture of additives and the product right after the incubation process. The tank is appropriate to be washed with the CIP system. The legs of the tank are designed as adjustable and have shoes to prevent disturbing the structure of the ground. The tank is completely made of AISI 304 quality stainless steel
